My husband is actually a NP and a citizen of Italy. I am an echocardiographer. Our degree's do in fact transfer and there is plenty of work here. However, the problem for me is a command of the Italian language. It is a must. There also seems to be a shortage of nurses here as well. The work system for nurses seems to be different from what I am accustomed to in America. Here, many of the nurses perform the same functions of medical assistants in America, all day. It is not uncommon to see a registered nurse at the front desk of the emergency room. The doctors also perform a lot of their own testing as opposed to delegating it to nurses, technologists, etc.
For the most part, I don't think you will have a problem finding work as long as you have a command of Italian.
