Thanks.. I thought it was spelt "Ginny" but yes in Calabria we call them porcellino salvagio. You boil a pot of water as if you are preparing to cook fresh lobster and drop the wild animal in it skins so easy and cleanly. What a fantastic meat so delicate like rabbit but much better, then you added with the ingredients when preparing a meat sauce "ragu". It was the best ragu sauce I had ever tasted! Cavia is the proper Italian word for Guinea Pig.
