This sounds delicious
I'm not sure if this is indeed an authentic dish but I thought I would post it because it has so many fresh ingredients. It does seem to be based on the idea of simple and fresh ingredients like so much of Italian Cooking!
1 pound of fusilli pasta
3 tablespoons olive oil
2 garlic cloves
3 cups cherry tomatoes cut in quarters
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup fresh basil leaves torn
8 ounces of fresh mozzarella diced
Cook the fusilli in well salted water for about 8-10 minutes or until al dente.
Drain the pasta and place in a large bowl. Reserve 1/2 cup of the pasta water.
Heat the olive oil over medium heat. Add the garlic and sauté for a couple of minutes until fragrant. Add the tomatoes, salt, and pepper. If you wish, you can smash the tomatoes with a fork to make a chunky sauce. Cook for about four minutes. Take the cooked tomatoes and place them in the bowl of cooked pasta. Toss well. Add the basil and mozzarella and stir well. Add the reserved pasta water 1/4 cup at a time until fusilli are moist.
