I have attended two different immersion programs in Italy and the one in Rome I studied with this summer was wonderful. I learned an incredible amount, the teachers are all great, and the staff is very helpful. They have side-by-side cultural programs, all in Italian.

It is called Torre di Babele and can be found on web at http://torredibabele.com/. They are part of a group of schools that has other programs in Venice and Trieste (also one in Napoli but that's south) and I unfortunately don't remember the name of the overarching organization. I know if you email them they will be able to give you that info.
