Here is a recipe for egg biscuits. My great grandmother from Caserta used to make these and in my family we lovingly call them "nana biscuits" I THINK this is an authentic southern Italian Recipe but I am not sure. Could somebody verify?
3 eggs
1 tsp vanilla
3/4 cup sugar
1/2 cup milk
1/2 cup corn oil
4-5 cups flour
5 tsp baking soda
lemon and orange zest
Wisk the first five ingredients together then add the 4 cups of flour and the baking soda to form a light and SLIGHTLY sticky dough. Do not over use the flour or the cookie will come out too heavy. Take small ball shaped peices of dough and place on a non-stick cookie sheet. bake for 12 minutes at 375 degrees.
Allow to cool to room temperature and ten frost with icing...see directions below. Allow icing to dry and harden before serving. This should make about 40 biscuits.
Icing: take 1.5 cups of powdered sugar and a very small amount of water. Mix together until you have a thick icing.
